Valentine Rolled Cookies

  • 1 cup butter, softened
  • 3 tbsp milk
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 egg
  • 1 ½ tsp baking powder
  • 1 tsp vanilla
  • 1 tsp salt
  • ¼ to ½ tsp red food color
  • Sugar, if desired

  • Beat the butter, 1 cup sugar, milk, egg, and vanilla in a large bowl with electric mixer on medium speed until are well blended by scrapping the bowl occasionally. Beat in flour, baking powder and the salt on low speed, until are well mixed, scraping the bowl occasionally.
  • Then you can divide the bowl in half and to one half of the dough, stir or knead in red food color until desired pink color. Next, cover it with plastic wrap and refrigerate at least 1 hour for easier handling.
  • Heat the oven to 400F and work with 1/3 of white dough at a time, by keeping the remaining dough refrigerated. Roll out the white dough with a rolling pin to 1/8-inch thickness, on a lightly floured work surface, and then cut with floured 2 1/2 –inch heart-shaped canapé or cookie cutter. On ungreased cookie sheets place 1-inch apart, and repeat with 1/3 of the pink dough. Don’t forget to keep the remaining pink dough refrigerated.
  • Using floured 1-inch heart-shaped cookie cutter or canapé, just cut the center from each pink and white cookie. You should remove the centers, replace each center of cookie with a cutout of opposite colored dough and sprinkle with sugar.

Bake until the edges are light golden brown, 5 to 9 minutes. then cool for a minute, and remove from cookie sheets.
